Role Description The Chef Tournant Fine Dining is a full-time, on-site culinary role located in Truckee, CA, responsible for supporting and leading various kitchen stations within the resort’s fine dining outlets. This role rotates through different areas of the kitchen, ensuring consistent food quality, precise execution of recipes, and adherence to luxury brand standards. Daily responsibilities include preparing and plating dishes to fine dining specifications, overseeing mise en place, monitoring food safety and sanitation, and assisting in inventory and ordering. The Chef Tournant collaborates closely with the Executive Chef and Sous Chefs, mentors culinary team members, and helps refine menus and specials that enhance the guest experience. This position requires flexibility to work varied shifts, including evenings, weekends, and holidays, to meet the needs of the operation.

Qualifications

  • Strong fine dining culinary skills, including advanced cooking techniques, precise plating, and familiarity with upscale ingredients.
  • Experience managing multiple kitchen stations, supporting menu execution, and maintaining consistent food quality in a high-volume luxury environment.
  • Comprehensive knowledge of food safety, sanitation standards, and proper kitchen hygiene practices, with relevant certifications preferred.
  • Ability to lead and mentor culinary team members, collaborate effectively with chefs and front-of-house teams, and communicate clearly and professionally.
  • Proven capacity to work efficiently under pressure, manage time and tasks in a fast-paced environment, and adapt to changing service needs.
  • Previous experience in luxury hotels, resorts, or upscale restaurants is highly beneficial; Ritz-Carlton or Marriott brand experience is a plus.
  • Culinary degree, formal apprenticeship, or equivalent professional kitchen experience in fine dining settings is preferred.
  • Willingness to work on-site in Truckee, CA, with flexible availability for evenings, weekends, and holiday shifts.
