AM Line Cook

As an AM Line Cook, you are the backbone of our daytime operations. You will be responsible for high-level prep work and executing service during our busiest morning and lunch hours. We operate with a focus on artisanal techniques—including dry-aging programs and scratch-made components—requiring a cook who respects the craft and the product.

Key Responsibilities

• Station Excellence: Execute menu items to exact specifications, ensuring consistent plate presentation and flavor profiles.
• Precision Prep: Manage complex prep lists, including delicate knife work and multi-stage recipes, to set the kitchen up for success.
• Service Pace: Maintain a calm, efficient "push" during peak service times while keeping a clean and organized station.
• Quality Control: Maintain rigorous food safety standards and uphold our commitment to high-quality, ingredient-focused cuisine.
• Collaboration: Work closely with the Sous Chef and General Manager to refine service standards and mentor junior staff.

Requirements

• Experience: 2+ years of experience in a high-volume, upscale, or fine-dining environment.
• Technical Skills: Proficiency in classic culinary techniques, meat fabrication, and sauce work.
• Mindset: A professional commitment to hospitality and a desire to work in an environment that values continuous improvement.
• Availability: Must be available for early morning shifts, including weekends.
• Communication: Ability to communicate clearly and effectively under pressure.
